cucumber roll-ups

- 1 cucumber
- 1 tomato
- roasted bell peppers
- a few olives
- hummus, can substitute with whatever spread you like

  1. Using a peeler, slice thin, wide strips of cucumber
  2. Spread hummus onto the cucumber strips
  3. Chop and lay down the filling—the tomato, bell peppers, olives and/or whatever substitute you’d like
  4. Roll up the cucumber slices
  5. Enjoy!

 

 

 

fruit & nut toasts

- rice crackers
- nut butter (we use peanut butter and cashew nut butter)
- fruit, here we are using raspberries

  1. Spread the nut butter onto the rice cracker
  2. Place your fruit on top and mash it!
    2a. For a cuter version, slice raspberries in half and add some small mint leaves.

 

 

 

avococoa smoothie

 

- 1 banana
- ½ avocado
- ½ cup ice
- 4 tbsp milk of your choice
- 2 tbsp unsweetened cocoa powder
- 1 tsp maple syrup
- ½ tsp vanilla extract

 

  • Blend all the ingredients together
  • Enjoy!

Tip: Save two slices of banana for a cute garnish

 

 

apple crisp

- 1 apple, chopped
- 3 tbsp oats
- 1 tbsp coconut oil
- 1 tsp cinnamon
- 1 tsp maple syrup
- 1 tsp lemon juice

  1. Heat up the oil on low
  2. Add the chopped apple and cook for about 5-7 minutes, until soft
  3. Add in oats, cinnamon, maple syrup and lemon juice
  4. Give it a good stir and continue cooking for another 2 minutes
  5. Serve, add a scoop of ice cream for the full apple-pie experience!
